Tilapia, Brown Rice & Black Beans

When I don’t feel like cooking, this meal is our staple at the Taylor Family Household. Considering that it can be made in 15 minutes flat—from stove to table—it makes this meal a definite favorite. One way we shave off so much time while cooking brown rice is to use instant brown rice. Our favorite brand is Aldi’s Fit & Active Instant Brown Rice. It cooks in five minutes, and is highly nutritious.

Here’s how we pull this meal together.
Brown Rice:

Bring 1 cup of chicken broth to a boil. Add 1 cup of Fit & Active Instant Brown Rice. Let it boil for 30 seconds, lower the heat to simmer, and cover with lid. Cook for 5 minutes and the rice is done. (As you can see in the picture, we add things to it – like red peppers, green onions, mushrooms, garlic, etc. Feel free to make it your own.)

Black Beans:

While the rice is cooking, open one can of beans and pour it into a small pan and let it bubble. Add a touch of garlic powder or onion powder. We also add jalapeños to the beans for a little kick. It should be done in about 5-7 minutes.

Tilapia:

Thaw the tilapia. Pour a little oil in a non-stick pan and add the fish. Sprinkle some salt, pepper, cayenne pepper, smoked paprika, and some parsley. Flip the fish and do the same. Let it cook thoroughly – this will only take about five minutes total.

Serve and enjoy! This will become your go-to meal as well. Trust me.

    Where can one buy tilapia? The instructions say to thaw it, so do you buy it frozen?
    Also when you add things to the rice do you add them at the beginning or once the rice is done cooking?

    Hi Ruth. Good questions. I guess I should have said fresh or frozen tilapia. You can find frozen tilapia in any grocery store in the frozen foods section. You can buy fresh tilapia at any international grocery store that has a fresh fish counter, or at a fresh fish market. I usually buy a big bag of frozen tilapia at Aldi Grocery Stores and defrost it in the microwave for a few minutes and it is ready to go.

    I add veggies, etc., to the broth as it is starting to boil, then I add the rice and let it all cook together. Hope that answered your questions. Thanks again for stopping by this space!
