Guacamole Grilled Cheese Sandwiches

In an attempt to curb my enthusiasm for eating white rice three times a day, I have been seeking out food combinations that are healthier for me. This is a combination I don’t often think of because guacamole and bread don’t seem to readily go together in my head. But, I was so wrong! This was delicious and the Monterey Jack Cheese slices melted to perfection takes this to another level. Your kids will ask for this meal and if you are willing, they wouldn’t mind making it for themselves either!
INGREDIENTS

For the Guacamole

1 perfectly ripe avocado, chopped
1 roma tomato, chopped
1 small red onion, diced
1 lime, juiced
2 tsp garlic salt (add more if desired
a pinch of black pepper

a few slices of cheese (any kind you like but I used Monterey Jack cheese)
4 slices of bread (I used 12-grain bread)
some butter to dab on the bread

INSTRUCTIONS

Mix all the ingredients together for the guacamole in a bowl and set aside. If you want it creamier, mash the avocado with a spoon.

Butter one side of the bread, then flip it over and spread the guacamole on the bread. Layer the slices of cheese over the guacamole. Top it with the other buttered slice of bread.

Heat a nonstick skillet on medium high, and place one buttered side of the sandwich. Flip it over carefully after a minute or two, making sure both sides are browned.

Remove from heat. Cut in half or not. Eat with no interruptions 😀
