Grilled Chicken w/ Spicy Dry Rub

A couple of weeks ago, one of our friends organized a pool party BBQ at our neighborhood pool. It was a ‘bring your own meat and a side dish to share’ type of BBQ. It was a lot of fun and the kids loved it! Aaron and I had fun trying out all the other dishes and we enjoyed the time with our friends.

To make things simple, I decided to try a dry rub for the chicken as it required very little to no marinating time.  I adjusted and experimented with the dry rub until I arrived at the combination I liked. It was amazing how well the meat had absorbed this rub and because I used chicken thighs, it cooked in a jiffy!

The meat was juicy, the spice rub mixture was flavorful and we were very pleased with the outcome! Try it out and tell me what you think.
Ingredients:

  • 3 Tablespoons brown sugar
  • 3 Tablespoons paprika
  • 1 Tablespoon onion powder
  • 1 Tablespoon dried thyme
  • 1 Tablespoon salt
  • 1-1/2 teaspoons garlic powder
  • 1 teaspoon roasted ground cumin (or traditional ground cumin)
  • 3/4 teaspoon cayenne pepper, or to taste
Method: 
Make sure to pat the chicken pieces dry with a paper towel before you coat it in the spice dry rub mixture. Sprinkle the mixture generously and rub in every part of the chicken well. Let it sit for a few minutes or for as long as you like. 

Adjust the sugar vs salt according to taste. The cayenne pepper, too.  I was too lazy and did not do this but usually, once the meat is on the grill and 3/4 cooked, I baste it with Sweet Baby Ray’s or any other BBQ sauce of your choice. 

I also increase the spiciness because that’s how I like it.  But you can do it any way you want to. I use chicken thighs versus chicken breasts because I like the thighs better 🙂 Again, a preference, really. 

Hope you enjoy it! This rub is versatile and I use it on pork chops, steaks, chicken, etc. It works fantastically well on any type of meat.
