Grilled Chicken Green Apple Cranberry Walnut Salad


Another quick and easy salad to throw together when you realize that it is past 1pm and you have not made anything for lunch :) The ingredients are all listed in the subject line of this post but I will write them out here for convenience.

Ingredients:

1 large chicken breast, pan grilled and seasoned with salt and pepper
1-2 cups of spinach
1/2 cup of cranberries
1 Granny Smith apple
1/2 cup of walnuts, chopped if desired. (Mine were already halved so I just dropped them in.)
Drizzle some balsamic vinaigrette over it. Toss and serve.

I have never been a huge fan of salads but I am changing my mind considering how quickly I can put one of these together! Enjoy!
